Michael Chiem, award-winning mixologist and one of the mad scientists behind PS40’s famous breakfast negroni, has returned to create a sustainable vodka cocktail recipe that celebrates the forgotten items in your fridge.
Chiem has partnered with Absolut to launch Absolut Reuse; a collective of Australian makers, designers, artists and chefs to inspire and celebrate the reuse of the otherwise wasted, old or forgotten. Showing us that with a little creativity, anything old or wasted can be reimagined into something brilliant.
Enter: The Re-tini. A refreshing take on the classic martini that delivers new flavours from the most unlikely everyday ingredients.

Ingredients
- 45ml Absolut Vodka
- 5ml Trashcan citrus husk olive brine
- 20ml Pea and sad herbs syrup
- 20ml Tomatillo juice
- Coriander powder to garnish
Method
- In a small saucepan, cover citrus husk with water and olive brine, bring to the boil and then take off the heat. Allow to cool, then strain and store in the fridge.
- In a small saucepan, boil lightly salted water (approximately 2 cups) and blanch the sugar snap peas. Fresh in ice water. Repeat this process with the sad herbs. Put the peas and herbs in a blender, along with 100ml cold water and 100g of caster sugar, blend until smooth, allow to cool and store in the fridge.
- Juice the tomatillos as you would any fruit and reserve.
- Put all ingredients into a Boston glass cocktail shaker, shake, then strain and pour into a martini or coup/coupette glass, garnish with a pinch of ground coriander powder over the top.
